What's better, kefir and Yogurt?

These foods are very easy to confuse because they have very similar properties and aspects.  

Both are dairy products that act as probiotics in our body but differ in their origin and fermentation process.


Yogurt is produced only from a lactic fermentation produced by specific bacteria (Streptococcus thermophilus and Lactobacillus bulgaricus) and its process lasts from 2.5 to 3 hours.

Kefir is obtained by lactoalcoholic fermentation, mediated by bacteria and yeast fungi (Lactobacillus acidophilus and Kluyveromyces marxianus). This yeast can vary depending on the region and the fermentation process. It has a fermentation time of 14 to 18 hours and can degrade lactose by 99%.

Due to these different fermentation processes, yogurt contains 2 to 7 types of probiotics while kefir contains 10 to 34 types.
