Ingredients
1/2 cups of brown rice
4 cups of water
1 jar (190 grams) asparagus tips, drained
1 red bell pepper, seeded and minced
2 red apples, cored and chopped
1/4 cup white raisins
1/2 cup of whipping cream
1 tablespoon curry powder
1 teaspoon lemon juice
Salt and pepper to taste
Step by Step
Place the rice and water in a saucepan. Bring to a boil, reduce the heat to low, cover and simmer for 30 minutes, until the rice has softened. Drain and, if necessary, cool.
While the rice is cooling, place the raisins in a bowl and cover with plenty of hot water. Soak for 20 minutes to inchen. Drain.
In medium bowl, beat cream until soft peaks form. Wrap the curry powder, lemon juice, salt and pepper. Mix in a salad bowl the rice, asparagus, pepper, apples and raisins. Wrap the cream and refrigerate until serving.
