This dish seems a bit complicated but it’s more easier than you think.
Ingredients:
600 g of boiled potato
10g salt
10 g chaat masala
60 g potato starch
For the base curry:
250 g chopped onion
450 g chopped tomato
20 g of garlic and ginger paste
1 bay leaf
15 g whole coriander
15 g whole cumin
5 g whole cloves
5 g whole mace flower
10 g whole wild cinnamon
5 g black cardamom
500 ml of chicken broth
20 g of coriander powder, cumin, red pepper, curmuca and white pepper
50 g of natural yogurt
For the vinaigrette:
10 g minced shallot
10 g chives
Virgin olive oil
White wine vinegar
RECIPE PREPARATION
First, we peel the boiled potato with the help of a knife or with our hands. Once peeled, we grate the potato in a bowl.
Next, we add the grated potato, the starch and the masala chat to the bowl and mix it until we obtain a kind of paste.
With the help of a spoon or with our hands, we form balls of approximately 60 g and we arrange them on our work surface. Lightly crush each of the balls and reserve.
We put a frying pan on the fire with a little olive oil to heat. When the oil is hot, brown the crushed balls on both sides and sprinkle a little starch on top to make them even more crisp.
On the other hand, we prepare the base curry. To do this, mix the chopped onion, chopped tomato, garlic and ginger paste, bay leaf, whole coriander, whole cumin, cloves, mace flower, wild cinnamon, black cardamom, chicken broth, red paprika powder in a bowl. , cumin powder, turmeric, white pepper powder and yogurt. We mix well until all the ingredients are integrated.
Next, we pass this mixture to a saucepan and put it to heat on the fire. We include the chickpeas cooked in the saucepan and heat them with the base curry.
While it is heating, prepare the vinaigrette by mixing the chopped shallot, chives, a little virgin olive oil and a splash of white wine vinegar in a small bowl. We booked.
We place covering the bottom of the plate or a bowl with the potato cakes and cover with the chickpea sauce and finish with a little vinaigrette on top.
