How to prepare Baigan Bharta

  1. Roast the aubergines. There are two ways to do it. One is to place them on an oil-free baking sheet on parchment paper. They are roasted at 180ºC until the skin is black. The downside of this technique is that they do not have the smoky flavor that characterizes baingan bharta.
  2. The other way to grill the aubergines is to do it directly over the kitchen fire with a rotisserie. This is the recommended way.
  3. Remove the skin from the aubergine. Cut into small pieces and put them in a container with a tablespoon of olive oil and reserve.
  4. Peel the tomatoes and cut them into small cubes. Reserve.
  5. Heat a frying pan with a little olive oil. add the finely chopped garlic, onion and ginger. When the onion and garlic begin to brown, add the chopped tomatoes.
  6. Wait for the tomatoes to cook and add the cumin, cayenne pepper, coriander powder and a touch of salt and pepper.
  7. Add the aubergines, cover and wait for all the vegetables to reduce and the liquid begins to dry. Stir every so often so that they do not burn. Cook until they turn into a paste.
  8. Add the garam masala and cook one more minute.
  9. If an Indian garam masala is not available, the spices of your choice can be used.
