This rich salad is very visually appealing. Besides being healthy and fresh, it also has a balance between fruits and vegetables, the crunch of nuts and the vinaigrette makes it very interesting.
Ingredients.
For the salad.
140 grams arugula 5 oz.
1/8 red bighead onion in feather or julienne.
1 mango cut into cubes.
10 tomatoes cut in half.
1/2 green apple cut into small cubes.
4 small radishes, sliced.
some raspberries and walnuts for garnish (optional).
For the Vinaigrette.
2 tablespoons orange juice.
2 tablespoons dijon mustard.
12 drops lemon juice.
honey, salt and pepper to taste.
Preparation.
Salad
Wash and drain fruits and vegetables very well.
Cut radishes, apple and mango without seeds and rind.
Cut the onion and tomatoes.
Mix all the ingredients in a bowl and serve immediately since the arugula wilts quickly when in contact with the vinaigrette
