Beetroot Curry. A very nutritious dinner that you won´t fail to try

This dish is a great option to prepare at your dinner and share with your family and friends. Besides being delicious it is very nutritious.

  1. Add olive oil to coat the bottom of a pan
  2. Add onion and saute till slightly caramelized - this took about 10 minutes for me
  3. Add garlic and ginger and stir
  4. Then add in the cubed beets
  5. Pour in the coconut milk and water, and spoon in the tomato paste as well as the garam masala, and chili powder
  6. Stir till all ingredients are well incorporated and cover and let simmer over a low-medium flame for about 15-16 minutes till beetroot is tender
