Ingredients
1/2 cups quinoa, white
1/2 cups quinoa, red
1 cup of cream, vegan of cashew, for coriander dressing
1 cup fresh cilantro, blanched for dressing
1 tablespoon of garlic, powder, for the dressing
1/4 cups of lemon juice, for the coriander dressing
1 serrano pepper, for the coriander dressing
1 tablespoon vegetable oil, avocado
2 tablespoons garlic, finely minced
1/2 cups onion, finely chopped
1 cup black beans, whole, cooked
1 cup of artichoke heart
1 cup bell pepper, colored, diced
salt and pepper to taste
1 avocado, sliced
1 cup cherry tomato, cut in half
1/4 cups of fresh cilantro, to serve
1/4 cups of tortilla, in strips and fried, to serve
Preparation
Boil water in a pot and cook the quinoa for about 15 minutes or until it bursts. Strain and reserve.
For the dressing, blend the vegan cream with the coriander, garlic powder, lemon juice and serrano pepper until all the ingredients are incorporated. Reservation.
Heat a pan over medium heat with the oil and sauté the onion, add the garlic, beans, artichoke and peppers, cook for a few minutes. Add the quinoa, season to your liking.
Serve the previous preparation in a bowl and decorate with the avocado, the tomatoes, the coriander leaves, the dressing and the tortilla.
