Gluten-free salty egg and vegetable muffins

We usually eat an endless variety of sweet muffins, but we don't have the idea that they can also make a great savory dessert.

The advantage of this delicious salty dessert is that they are always prepared on the same basis and from there you can add multiple ingredients, we can change the combinations and we will obtain different flavors.

Step by Step

  1. Put a pan on the fire with 3 tablespoons of extra virgin olive oil. Cut the onion into brunoise and add it to the pan when the oil is already hot. Add a pinch of salt and pepper.
  2. When the onion is transparent, remove approximately half and reserve it for later. In the same pan with half the onion add the zucchini into pieces and continue cooking
  3. When it's done, add a little salt and add the pepper. Reserve this mixture and let it cool. When it is cold add the feta cheese in pieces and mix well.
  4. In the same pan add the sautéed onion that you had previously reserved along with the sliced mushrooms, sauté everything, again leave the pan uncovered.
  5. When cooked, add the diced bacon and sauté too. At the end, correct the salt and add pepper. Reserve and let it cool down a bit.
