  1. Heat the oil over low-medium heat in a medium saucepan.
  2. Sauté the onion and fresh red chili for 5 minutes until the onion is soft.
  3. Add the garlic paste and stir for 2 minutes.
  4. Add the cumin, coriander, and ground chili and stir.
  5. Add the mushrooms, salt, and tomato paste and mix well.
  6. Add the water and lower the heat to low.
  7. Cover the casserole and cook for 5 minutes.

  9. Transfer to a serving platter and top with chives (or cilantro) for garnish.
