280g Mushrooms
4 tablespoons of sunflower or olive oil 4 c. tureens
1 chopped onion
1 red chili, minced
2 tablespoons garlic paste
2 tablespoons of Cumin
2 tablespoon of ground chili
¼ cup of water
1 tablespoon Tomato concentrate
1 tablespoon chives or chopped cilantro
Preparation
Heat the oil over low-medium heat in a medium saucepan.
Sauté the onion and fresh red chili for 5 minutes until the onion is soft.
Add the garlic paste and stir for 2 minutes.
Add the cumin, coriander, and ground chili and stir.
Add the mushrooms, salt, and tomato paste and mix well.
Add the water and lower the heat to low.
Cover the casserole and cook for 5 minutes.
Stir and continue cooking for a couple more minutes.
Transfer to a serving platter and top with chives (or cilantro) for garnish.
