Lentils, like other legumes, provide a wide variety of minerals, some in much higher amounts than other foods. They contain 23.5% protein, more than beans or chickpeas, and also more than meat, fish and other products of animal origin, although these are not dehydrated and are eaten in larger portions.It is a very easy recipe, although it takes time.

The good thing is that you don't have to watch the fire all the time, so you can take advantage of your time doing other things while the curried lentils are cooking.

Another of its strengths is its richness in minerals. A single serving (80 g raw) covers a high percentage of the daily needs of the most significant, such as iron, potassium, calcium, magnesium, phosphorus, zinc and selenium.

 

INGREDIENTS

1 cup of lentils (220 grams)

1 cup of basmati rice (200 grams)

2 cloves of garlic

1/2 onion

1 tablespoon of extra virgin olive oil

450 grams of tomato sauce

2/3 of cup of coconut milk (150 grams)

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

1/2 teaspoon turmeric

1 teaspoon garam masala

2 teaspoons curry

PREPARATION

In a pot with boiling water, add the lentils and let them cook over medium high heat for 40 minutes (the time may vary depending on the type of lentils you use).

In a pan we add one or two tablespoons of oil and when it is hot we add the chopped garlic and onion, let them brown, add the tomato sauce, the coconut milk and the spices. We remove.

After about 5 minutes add the drained lentils, stir and leave at least 15 or 20 minutes over medium heat. The longer it is, the more flavor it will have. We put the basmati rice in boiling water and cook it over medium high heat for 12 minutes or until it is to your liking.

We serve the rice and place the curried lentils on top or directly mix the two.
