Cauliflower is a marvel of vegetable, it has many benefits and is very easy to work and adapts to millions of dishes. Cauliflower tastes delicious in soup, roasted, raw, in salad, or on rice.
It also is a food with a very complete nutritional profile, since it has very few calories but contains a large part of the vitamins and minerals that our body needs daily.
It contains a large amount of fiber that is beneficial for digestion and can reduce the risk of chronic diseases. In addition, gastronomically speaking, it is a luxury substitute for other much more caloric foods such as rice or flour.
The first time I tried to make cauliflower rice it didn't suit me, but I kept trying until I liked it, did it a couple of times until I hit the spot. And with practice I realized several mistakes I had made.
I'm sure that this delicious plant-based dinner or meal, full of super powers and vegetables of all the colors of the rainbow, will come out of the blue for you. This recipe can be served with a cucumber salad, with a beet salad and Asian dressing, or alone.
Well it's not really rice, it's grated cauliflower. When you grate or process it, it takes the consistency of rice.
1 head of cauliflower small or medium large
1 250 grs. block of extra firm tofu not from tetrapack, from which it comes refrigerated
1 tablespoon avocado or coconut oil
3 garlic cloves, finely chopped
1 medium piece of grated ginger
1 red bell pepper, sliced
¾ cup of grated carrot
¾ cup of whole corn kernels
¾ cup frozen peas
3 tablespoons soy sauce
1 tablespoon toasted sesame oil
1 teaspoon of sea salt
At your service:
¼ cup of toasted sesame seeds
Break the cauliflower into small pieces and put it in the bowl of the food processor. Pulse several times until it is the size of grains of rice. When it is all ground, set aside.
Remove the extra firm tofu from the package, drain very well, and place in the bowl of the food processor. Hit it until it's totally messed up. In a large skillet over medium heat, put the tablespoon of oil, add the garlic and ginger.
When it starts to smell, add the cauliflower and mix very well, leave it for five minutes or until the cauliflower begins to make a little transparent. Add the rest of the vegetables and move continuously so it does not stick. Everything must be loose.
Add the soy sauce and toasted sesame oil, mix well and serve. Finish each dish with chopped cilantro and toasted sesame seeds. You can also accompany it with a tasty fresh bread.
