300 g cherry tomato

160 g Greek yogurt

10 fresh mint leaves

10 fresh basil leaves

20g chat masala

10 g roasted whole cumin

20 g fresh coriander

2 shallots, minced

100 g of cooked chickpeas

100 g cashew nuts

Sunflower oil

First, we wash the tomatoes and blanch them. To scald them, we put a pot or saucepan with water to boil.

With the help of a knife or lace, we form two cross-shaped cuts to the tomatoes and, when the water is boiling, we submerge them for a few seconds and recover them quickly. To preserve their color, we submerge them again in a bowl with ice water or in the fridge. Once blanched, peel the tomatoes and reserve.

Next, we prepare the basil oil. To do this, we finely chop the basil leaves and mix them with sunflower oil in a bowl until the oil takes on a greenish color. We booked.

Next, we mix the yogurt, cumin and chat masala in a bowl. When the spices have been integrated with the yogurt, we pour it into the base of a plate.

Distribute the peeled cherry tomatoes, the chopped shallot, the cooked chickpeas and the cashew nuts on top. We finish by placing some fresh mint leaves and seasoning with the basil oil that we have prepared.
