Sweeten your day with a Mango Shrikhand

Also called Lassi, it is a traditional indian dessert that consists in a strained yogurt that can be sweetened and flavored with cardamom or saffron

How to prepare mango Lassi with Thermomix

  1. With a cloth or a cloth strainer we strain the yogurt to remove the serum, if we don’t have cloth, we can put it in a regular strainer, it’s about releasing as much liquid as possible so we will need to leave it draining 2 or 3 hours.
  2. While the yogurt is draining, we can take the opportunity to peel the mango and chop it.
  3. Once we have the yogurt and the mango ready, we introduce the chopped mango into the Thermomix glass and we puree it, programming 30 seconds at speed 5. Once the time is over, we reserve it in a bowl.
  4. Without washing the glass, put the butterfly and add the yogurt, sugar and cardamom, mix again for 15 seconds at speed 3 and a half.
  5. Add the reserved mango puree and program 30 seconds at speed 3 and a half.
